Who among you has never ordered a Calimero in a mountain hut? The taste bomb prepared with cream of egg liqueur, espresso coffee and whipped cream, all topped off with an abundant snowfall of bitter cocoa, can warm you up after the most difficult of descents, but to enjoy your day to the fullest and with all the energy you need, sit down comfortably and order, perhaps, a good plate of canederli. Beloved in Trentino Alto Adige, they are a very poor dish made with breadcrumbs. In appearance they are similar to small meatballs but inside there are pieces of smoked speck, parsley and various herbs. The original recipe was created in order to recover leftovers, however today there are many variations of this recipe, both dry and in broth. The former can also be accompanied by a nice knob of butter and sage!
The winter dish par excellence, to be eaten almost on skis, is polenta. Choose it in all kinds of sauces, it is one of the most appreciated dishes of the Aosta Valley. Add gravy and meat at will but, above all, a snowfall of cheese!
Among the dishes of the ancient tradition there are also pizzoccheri, they are at the top in the area of Sondrio. They are similar to tagliatelle and are made by working buckwheat flour and wheat.
